Cozy up this fall with bite-sized pumpkin spice fritters. We’ve lightened up the dough and given them a quick chill before frying to ensure an extra-fluffy interior and crisp exterior. Perfect with coffee or cider!

Ingredients

  • 1 cup canned pumpkin puree
  • 2 large eggs, room temperature
  • 2 tablespoons melted unsalted butter, cooled
  • ⅓ cup granulated sugar
  • ¼ cup brown sugar, lightly packed
  • 1 cup whole milk
  • 2 ¼ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon kosher salt
  • Vegetable oil, for shallow-frying (about 2 inches deep)
  • Glaze: 1 cup powdered sugar, 2–3 tablespoons milk, ½ teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together pumpkin puree, eggs, melted butter, granulated sugar, brown sugar, and milk until smooth.
  2. In a separate bowl, sift flour, baking powder, pumpkin pie spice, and salt. Gently fold the dry mixture into the wet ingredients until just combined. Avoid over-mixing — a few streaks of flour are okay.
  3. Cover the batter and refrigerate for 20 minutes. Chilling helps the fritters puff up when fried.
  4. Meanwhile, whisk together glaze ingredients until silky. Set aside.
  5. Heat 2 inches of vegetable oil in a heavy skillet to 350°F (180°C). Use a small ice cream scoop or two spoons to carefully drop 1-tablespoon portions of batter into the oil, working in batches. Don’t overcrowd the pan.
  6. Fry fritter bites 2–3 minutes per side, or until deep golden brown. Transfer to a wire rack set over a baking sheet.
  7. When warm, drizzle or dip each fritter into the glaze. Let excess drip off, then serve immediately.

Special Tip

For an even crisper shell, add 1 tablespoon of cornstarch to the dry mix. If you prefer to bake, place scooped batter on a parchment-lined sheet, brush lightly with melted butter, and bake at 400°F for 12–15 minutes, flipping halfway.
