These tender pumpkin spice fritters are lightly chilled before frying for extra fluffiness, then glazed with a vanilla-spiced icing. Perfect fall treat!

Ingredients
  

  • 1 cup pumpkin puree
  • 2 large eggs
  • 2 tablespoons melted unsalted butter
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 cup whole milk
  • 2 1/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon kosher salt
  • Vegetable oil for frying
  • 1 cup powdered sugar
  • 2 –3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Method
 

  1. Whisk together pumpkin, eggs, melted butter, sugars, and milk until smooth.
  2. Sift flour, baking powder, pumpkin pie spice, and salt into a bowl. Fold into wet ingredients until just combined.
  3. Chill batter for 20 minutes in the refrigerator.
  4. Mix glaze ingredients in a small bowl and set aside.
  5. Heat oil to 350°F in a heavy skillet. Scoop 1-tablespoon portions of batter into oil; fry 2–3 minutes per side.
  6. Drain on a wire rack, then dip or drizzle fritters with glaze and serve warm.
