Method
- Whisk together pumpkin, eggs, melted butter, sugars, and milk until smooth.
- Sift flour, baking powder, pumpkin pie spice, and salt into a bowl. Fold into wet ingredients until just combined.
- Chill batter for 20 minutes in the refrigerator.
- Mix glaze ingredients in a small bowl and set aside.
- Heat oil to 350°F in a heavy skillet. Scoop 1-tablespoon portions of batter into oil; fry 2–3 minutes per side.
- Drain on a wire rack, then dip or drizzle fritters with glaze and serve warm.
