Instructions
- In a large bowl, whisk together pumpkin puree, eggs, melted butter, granulated sugar, brown sugar, and milk until smooth.
- In a separate bowl, sift flour, baking powder, pumpkin pie spice, and salt. Gently fold the dry mixture into the wet ingredients until just combined. Avoid over-mixing — a few streaks of flour are okay.
- Cover the batter and refrigerate for 20 minutes. Chilling helps the fritters puff up when fried.
- Meanwhile, whisk together glaze ingredients until silky. Set aside.
- Heat 2 inches of vegetable oil in a heavy skillet to 350°F (180°C). Use a small ice cream scoop or two spoons to carefully drop 1-tablespoon portions of batter into the oil, working in batches. Don’t overcrowd the pan.
