Ingredients
  

  • ½ cup cooked white rice
  • 1 egg
  • 1 tablespoon milk
  • 2 teaspoons fresh basil chopped
  • Salt to taste
  • Pepper to taste

Method
 

  1. In a large bowl, mix cooked rice, egg, milk, basil, salt, and pepper until evenly combined.
  2. Heat a nonstick skillet over medium heat and lightly coat with oil.
  3. Scoop about 2 tablespoons of the rice mixture and form into a compact patty.
  4. Place patties in the skillet and cook for 2–3 minutes per side, or until golden brown and crisp on the edges.
  5. Transfer rice cakes to a plate lined with paper towels to soak up any excess oil.
