Method
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together peanut butter, sweetener, egg, and vanilla extract until smooth.
- Use a cookie scoop or tablespoon to drop 1-inch balls of dough onto the prepared sheet.
- Press each ball gently with a fork in a crisscross pattern.
- Bake for 12–15 minutes, or until the edges are just turning golden brown.
- Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
