Ingredients
  

  • 1 cup creamy peanut butter no sugar added
  • 1 cup granular natural sweetener erythritol or monk fruit
  • 1 large egg room temperature
  • 1 teaspoon pure vanilla extract

Method
 

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together peanut butter, sweetener, egg, and vanilla extract until smooth.
  3. Use a cookie scoop or tablespoon to drop 1-inch balls of dough onto the prepared sheet.
  4. Press each ball gently with a fork in a crisscross pattern.
  5. Bake for 12–15 minutes, or until the edges are just turning golden brown.
  6. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
