Authentic Colombian Arepas

Ingredients
  

  • 2 cups pre-cooked white cornmeal masarepa or P.A.N. brand
  • 1 cup warm water
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons butter softened
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil for frying

Method
 

  1. In a large bowl, combine the warm water, cornmeal, shredded mozzarella cheese, softened butter, and salt.
  2. Knead the mixture thoroughly until well combined and a soft, pliable dough forms. The texture should be smooth with no dry spots.
  3. Divide the dough into 6 equal portions and roll each into a ball about the size of a medium orange.
  4. Place each ball between two sheets of plastic wrap and flatten with a rolling pin to your desired thickness (typically about 1/2 inch thick).
  5. Heat a large skillet or griddle over medium heat and add the vegetable oil.
  6. Cook the arepas for approximately 5-7 minutes on each side until golden brown and crispy on the outside.
  7. The arepas are done when they sound hollow when tapped lightly.
