Authentic Greek Gyro Sandwich

Ingredients
  

  • 1 pound ground lamb or ground beef
  • 1 small onion cut into chunks
  • 3 cloves garlic minced
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon ground black pepper
  • 1/4 teaspoon sea salt
  • 12 large pita breads warmed
  • 1 cup hummus
  • 1 cup tzatziki sauce
  • 2 large tomatoes thinly sliced
  • 1 red onion thinly sliced
  • 1 cucumber thinly sliced
  • 1 cup crumbled feta cheese
  • 2 cups shredded lettuce
  • 1/4 cup fresh chopped parsley
  • Lemon wedges for serving

Method
 

  1. Place onion in a food processor and finely chop. Transfer onion to a piece of cheesecloth and squeeze out the liquid. Place drained onion in a large bowl.
  2. Add ground lamb or beef, garlic, and all seasonings to the bowl with the onion. Mix thoroughly until well combined.
  3. Cover the mixture and refrigerate for at least 1 hour or overnight to allow flavors to meld.
  4. Preheat oven to 325°F (165°C). Shape the meat mixture into a rectangular loaf on a baking sheet lined with aluminum foil.
  5. Bake for approximately 60-70 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Let the meat rest for 10-15 minutes, then slice it very thinly for the gyro assembly.
  7. Warm pita breads in the oven or on a dry skillet for about 30 seconds per side.
  8. Spread a layer of hummus on each pita bread, followed by a generous dollop of tzatziki sauce.
  9. Layer thinly sliced gyro meat on top of the sauces.
  10. Add tomato slices, red onion, cucumber, crumbled feta cheese, and shredded lettuce.
  11. Garnish with fresh parsley and a squeeze of lemon juice.
  12. Fold or roll the pita to form your gyro sandwich and secure with parchment paper or foil for easier eating.
