- Place onion in a food processor and finely chop. Transfer onion to a piece of cheesecloth and squeeze out the liquid. Place drained onion in a large bowl.
- Add ground lamb or beef, garlic, and all seasonings to the bowl with the onion. Mix thoroughly until well combined.
- Cover the mixture and refrigerate for at least 1 hour or overnight to allow flavors to meld.
- Preheat oven to 325°F (165°C). Shape the meat mixture into a rectangular loaf on a baking sheet lined with aluminum foil.
- Bake for approximately 60-70 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the meat rest for 10-15 minutes, then slice it very thinly for the gyro assembly.
- Warm pita breads in the oven or on a dry skillet for about 30 seconds per side.
- Spread a layer of hummus on each pita bread, followed by a generous dollop of tzatziki sauce.
- Layer thinly sliced gyro meat on top of the sauces.
- Add tomato slices, red onion, cucumber, crumbled feta cheese, and shredded lettuce.
- Garnish with fresh parsley and a squeeze of lemon juice.
- Fold or roll the pita to form your gyro sandwich and secure with parchment paper or foil for easier eating.
