- Ensure your tuna is extremely fresh and sushi-grade. Gently pat it dry with paper towels before cutting into even 3/4-inch cubes.
- In a large glass bowl, whisk together the soy sauce, sesame oil, rice vinegar, and honey (if using).
- Add the cubed tuna to the bowl and gently fold to coat each piece evenly in the marinade.
- Mix in the sliced green onions, sesame seeds, red pepper flakes, and sliced sweet onion.
- Cover the bowl and refrigerate for at least 2 hours to allow the flavors to develop and meld together.
- When ready to serve, prepare your rice bowls and gently mix the avocado into the poki mixture if desired.
- Spoon the poki over the rice and garnish with additional green onions, sesame seeds, and seaweed salad if desired.
