Method
- Drain the chickpeas, reserving a few whole ones for garnish if desired.
- Place the chickpeas, tahini, olive oil, lemon juice, water, garlic, and cumin into a food processor.
- Process until completely smooth and creamy, about 1 minute. Scrape down the sides as needed.
- Taste and adjust seasonings, adding salt or more lemon juice as needed.
- Transfer the hummus to a serving bowl and create a shallow well in the center with the back of a spoon.
- Drizzle with additional olive oil and sprinkle with paprika and fresh parsley before serving.
