- In a small saucepan, heat ½ cup milk over medium heat until it just begins to bubble around the edges. Remove from heat immediately.
- Add sugar, butter, and salt to the hot milk and stir until the sugar dissolves and butter melts completely. Set aside to cool to room temperature (about 10 minutes).
- In a large mixing bowl, dissolve yeast in warm water. Let stand for 5-10 minutes until foamy.
- Add the cooled milk mixture, remaining ½ cup milk, and beaten egg to the yeast mixture. Stir to combine.
- Gradually add 3 cups of flour, mixing until a soft dough forms. Add remaining flour as needed to form a slightly sticky dough that pulls away from the sides of the bowl.
- Turn dough onto a floured surface and knead for 8-10 minutes until smooth and elastic.
- Place dough in a greased bowl, turning once to grease top. Cover with a clean kitchen towel and let rise in a warm place until doubled in size, about 1 hour.
- Punch down dough and divide into 20 equal portions. Shape each into a ball.
- Flatten each ball into a 3-inch disk. Place a sausage link in the center.
- Fold the dough around the sausage, pinching the seams to seal completely. Place seam-side down on parchment-lined baking sheets, leaving 2 inches between each kolache.
- Cover and let rise for 30 minutes, or until puffy but not quite doubled.
- Preheat oven to 375°F (190°C).
- Brush the tops of kolaches with melted butter and sprinkle with optional seasoning if desired.
- Bake for 15-18 minutes, rotating pans halfway through, until golden brown.
- Cool on baking sheets for 5 minutes before transferring to a wire rack.
