Method
- Place 6 cups of water in a large saucepan and bring to a boil over medium-high heat.
- Once boiling, add the dried hibiscus flowers, cinnamon stick, cloves, nutmeg, and allspice. Stir to combine.
- Reduce the heat to medium-low and gently simmer until the water turns a deep, rich red color, about 30-45 minutes.
- Remove from heat and stir in the sugar until completely dissolved.
- Let the mixture steep and cool for about 20 minutes.
- Strain the liquid through a fine-mesh sieve into a large pitcher, pressing on the flowers to extract all the flavorful liquid.
- Add the remaining 6 cups of cold water and stir well to combine.
- Refrigerate until thoroughly chilled, at least 2 hours or overnight for the best flavor.
- Serve over ice with optional lime slices and mint leaves for garnish.
