Ingredients

  • 1 12-pound bone-in ham, rump portion
  • 1 cup packed brown sugar
  • Whole cloves about 30–40

Method

  1. Preheat your oven to 350°F (175°C) and line a large roasting pan with foil for easy cleanup.
  2. Score the top of the ham in a diamond pattern. Press a clove into each diamond—this classic studding adds warmth and spice.
  3. In a small bowl, combine brown sugar with 2 tablespoons of water to form a thick paste. Spread evenly over the ham.
  4. Place the ham, flat-side down, into the roasting pan. Bake low and slow for about 1 hour per 3 pounds, or until the internal temperature reaches 140°F.
  5. Every hour, baste the ham with pan drippings to deepen the glaze and keep the meat moist. Let rest 15 minutes before slicing.
