- Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil and lightly coat with nonstick cooking spray.
- In a small bowl, whisk together the heavy cream, Parmesan cheese, garlic powder, dried parsley, salt, and pepper until smooth.
- Place the pollock fillets on the prepared baking sheet and drizzle with lemon juice, if using.
- Divide the creamy Parmesan sauce evenly over each fillet, spooning it on top.
- Bake in the preheated oven for 12–15 minutes, until the fish flakes easily with a fork.
- For a golden finish, switch the oven to broil and bake an additional 1–2 minutes—watch carefully to avoid burning.
- Remove from the oven and let rest for 2 minutes before serving.
- Garnish with a sprinkle of fresh parsley and a lemon wedge.
