Ingredients
  

  • 6 pollock fillets 4 oz each
  • Nonstick cooking spray
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon fresh lemon juice optional

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil and lightly coat with nonstick cooking spray.
  2. In a small bowl, whisk together the heavy cream, Parmesan cheese, garlic powder, dried parsley, salt, and pepper until smooth.
  3. Place the pollock fillets on the prepared baking sheet and drizzle with lemon juice, if using.
  4. Divide the creamy Parmesan sauce evenly over each fillet, spooning it on top.
  5. Bake in the preheated oven for 12–15 minutes, until the fish flakes easily with a fork.
  6. For a golden finish, switch the oven to broil and bake an additional 1–2 minutes—watch carefully to avoid burning.
  7. Remove from the oven and let rest for 2 minutes before serving.
  8. Garnish with a sprinkle of fresh parsley and a lemon wedge.
