This baked salmon in foil is made with a large fillet of salmon seasoned with herbs, lemon, and brown sugar, wrapped in a foil packet, then baked.

Ingredients
  

  • 1 2-pound salmon fillet, skin on
  • ½ cup olive oil
  • 2 tablespoons brown sugar
  • 1 teaspoon dried dill
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • Juice of 1 lemon
  • 4 –6 lemon slices
  • 1 tablespoon chopped fresh parsley optional garnish

Method
 

  1. Preheat the oven to 375°F (190°C). Lay out a large sheet of aluminum foil on a baking sheet.
  2. In a small bowl, whisk together olive oil, brown sugar, dried dill, dried thyme, lemon juice, salt, and pepper.
  3. Place the salmon fillet, skin-side down, on the foil. Pour the olive oil mixture over the top and arrange lemon slices across the fish.
  4. Fold the foil sides over the fish and seal tightly to create a packet. Bake for 20 minutes, or until salmon flakes easily with a fork.
  5. Carefully open the foil—watch the steam! Transfer salmon to plates, garnish with fresh parsley, and drizzle any pan juices on top.
