- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
- In a large bowl, whisk together olive oil, oregano, salt, and pepper.
- Add the sweet potato cubes and toss until they’re evenly coated in the herb-infused oil.
- Spread the sweet potatoes in a single layer on the prepared baking sheet.
- Bake for 40–45 minutes, stirring once halfway through, until the cubes are golden brown and fork-tender.
- Let rest for 5 minutes before serving to lock in all the flavors.
