Ingredients
  

  • 4 medium sweet potatoes about 2 pounds, peeled and cut into 1-inch cubes
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Method
 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, whisk together olive oil, oregano, salt, and pepper.
  3. Add the sweet potato cubes and toss until they’re evenly coated in the herb-infused oil.
  4. Spread the sweet potatoes in a single layer on the prepared baking sheet.
  5. Bake for 40–45 minutes, stirring once halfway through, until the cubes are golden brown and fork-tender.
  6. Let rest for 5 minutes before serving to lock in all the flavors.
