Ingredients
  

  • 1 loaf French bread cut into ¼-inch slices
  • 2 cups sun-ripened tomatoes diced
  • ¼ cup fresh basil leaves finely chopped
  • 2 tablespoons high-quality balsamic vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 clove garlic halved (for rubbing on bread)
  • Salt and freshly ground black pepper to taste

Method
 

  1. Gather all your ingredients and preheat the oven to 400°F (200°C).
  2. Place the French bread slices on a baking sheet. Toast in the oven for about 5 minutes, until golden and slightly crispy.
  3. Combine diced tomatoes, chopped basil, balsamic vinegar, olive oil, salt, and pepper in a bowl. Toss gently to coat.
  4. Remove the bread from the oven. Rub each slice with the cut side of the garlic clove for a hint of garlic aroma.
  5. Spoon the tomato-basil mixture evenly over each toasted bread slice.
  6. Serve immediately, garnished with extra basil leaves if desired.
