Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon fine salt
  • 1 cup warm water
  • 2 tablespoons melted butter plus extra for frying

Method

  1. In a large bowl, whisk together the flour, baking powder, and salt until evenly combined.
  2. Pour in the warm water and melted butter. Stir with a wooden spoon until a shaggy dough forms.
  3. Turn the dough onto a lightly floured surface. Knead gently for 1–2 minutes, just until the dough comes together.
  4. Divide the dough into 12 equal pieces. Press each piece into a ½-inch–thick disc.
  5. Heat a skillet over medium heat and add a bit of melted butter or oil to coat the bottom.
  6. Place the dough discs in the hot skillet. Cook for 5–7 minutes per side, until puffed and golden brown.
  7. Transfer the cooked bannock to a wire rack and keep warm. Repeat with remaining dough.
  8. Serve warm with honey, jam, or alongside eggs, chili, or soup for a comforting snack.
