- Gradually add flour and milk, whisking constantly to avoid lumps.
- Stir in melted butter and a pinch of salt (and sugar if desired) until the batter is silky-smooth.
- Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
- Pour about 1/4 cup of batter into the pan, tilting to form a thin, even layer.
- Cook for 1–2 minutes until the edges lift and the bottom is golden. Flip and cook another 30 seconds.
- Transfer crepes to a warm plate and repeat with the remaining batter.
