Bavarian Sauerkraut

This sauerkraut recipe is a tasty side dish made with packaged sauerkraut cooked in bacon drippings with onion, brown sugar, caraway seed, and sherry.

Ingredients
  

  • 1 tablespoon bacon drippings
  • 1 medium onion finely chopped
  • 1 package 16 ounces sauerkraut, drained
  • 2 tablespoons brown sugar
  • 1 teaspoon caraway seeds
  • ¼ cup dry sherry
  • Salt and freshly ground black pepper to taste

Method
 

  1. Heat bacon drippings in a large skillet over medium heat until melted and slightly shimmering.
  2. Add the chopped onion to the hot bacon drippings and cook, stirring occasionally, until soft and translucent, about 5 minutes.
  3. Drain the sauerkraut well, squeezing out excess liquid, then add to the skillet with the onions.
  4. Sprinkle the brown sugar and caraway seeds evenly over the sauerkraut mixture.
  5. Pour the dry sherry over everything and stir to combine all ingredients thoroughly.
  6. Reduce heat to low, cover, and simmer for 30-35 minutes, stirring occasionally.
  7. Season with salt and pepper to taste before serving.
