Beef au Jus

This easy au jus recipe from Chef John combines beef drippings with broth to make a rich and flavorsome au jus perfect for prime rib or for dipping.

Ingredients
  

  • 0.25 cup beef drippings
  • 2 cups beef broth or stock
  • 1 teaspoon Worcestershire sauce optional
  • Salt and freshly ground pepper to taste

Method
 

  1. Gather all ingredients and strain the beef drippings to remove any solids.
  2. In a medium skillet over medium-high heat, warm the beef drippings until shimmering.
  3. Slowly whisk in the beef broth, scraping up any flavorful bits on the pan bottom.
  4. Add Worcestershire sauce, then season with salt and pepper to taste.
  5. Bring to a gentle simmer and cook for 8–10 minutes until slightly reduced and glossy.
  6. Remove from heat, strain if desired, and serve hot alongside prime rib, roast beef, or sliders.
