- Gather all ingredients.
- In a large pot over medium heat, melt the butter and add sliced onions. Sauté until golden and fragrant, about 5 minutes.
- Pour in the beer, then stir in garlic powder, smoked paprika, salt, and pepper. Bring the mixture to a gentle simmer.
- Add the bratwurst to the pot. Cover and simmer for 10 minutes, letting the beer broth infuse each sausage.
- Meanwhile, preheat your grill to medium-high heat (around 375–400°F).
- Transfer the brats from the simmering pot to the hot grill. Grill for 2–3 minutes per side, creating crisp, charred grill marks.
- Serve immediately on buns or plates, and top as desired with mustard, sauerkraut, or caramelized onions.
