- Slice each jalapeno in half and remove seeds (wear gloves!).
- In a bowl, combine cream cheese, Cheddar, and bacon bits. Season with salt and pepper.
- Fill each jalapeno half with the cheese mixture.
- Dredge in flour, dip in beaten eggs, then coat in breadcrumbs.
- Refrigerate for 15 minutes to set the coating.
- Heat oil to 350°F (175°C) and fry poppers for 2–3 minutes per side until golden.
- Drain on paper towels and serve hot.
