Best Ever Jalapeno Poppers

Homemade jalapeno poppers full of gooey cheese and savory bacon bits are deep fried to golden perfection.

Ingredients
  

  • 10 fresh jalapeno peppers halved lengthwise
  • 12 ounces cream cheese softened
  • 1 cup shredded Cheddar cheese
  • 4 strips crispy bacon finely chopped (about ½ cup)
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • Salt and pepper to taste
  • Vegetable oil for frying

Method
 

  1. Slice each jalapeno in half and remove seeds (wear gloves!).
  2. In a bowl, combine cream cheese, Cheddar, and bacon bits. Season with salt and pepper.
  3. Fill each jalapeno half with the cheese mixture.
  4. Dredge in flour, dip in beaten eggs, then coat in breadcrumbs.
  5. Refrigerate for 15 minutes to set the coating.
  6. Heat oil to 350°F (175°C) and fry poppers for 2–3 minutes per side until golden.
  7. Drain on paper towels and serve hot.
