Ingredients
  

  • 4 large russet potatoes scrubbed and patted dry
  • 4 tablespoons unsalted butter softened
  • 2 cloves garlic minced (or 1 teaspoon garlic powder)
  • ½ teaspoon kosher salt plus extra for sprinkling
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley chopped
  • 4 12 ×12-inch squares aluminum foil

Method
 

  1. Preheat your oven to 400 degrees F (200 degrees C). In a small bowl, mix butter, garlic, salt, and pepper until well combined.
  2. Cut each potato’s foil square in half, brush the potato with garlic butter, then place it on a foil piece. Turn the potato to coat fully, sprinkle with a pinch of salt, then wrap tightly.
  3. Arrange the foil-wrapped potatoes on a baking sheet. Bake for 40 minutes, or until a fork slides in easily and skins are crisp.
  4. Let potatoes rest for 5 minutes before unwrapping. Garnish with chopped parsley and an extra pat of butter if desired.
