- In a medium bowl, whisk together the Dijon mustard, minced garlic, Worcestershire sauce, brown sugar, lemon juice, salt, and pepper until smooth.
- Place the pork chops in a large resealable plastic bag or a shallow dish.
- Pour the marinade over the chops, seal the bag (or cover the dish), and refrigerate for at least 6 hours, or up to overnight for maximum flavor.
- When ready to cook, remove the chops from the fridge and let rest at room temperature for 15 minutes.
- Preheat your grill or skillet over medium-high heat. Lightly oil the grates or pan.
- Cook the pork chops for 4–5 minutes per side, or until they reach an internal temperature of 145°F (63°C).
- Transfer to a plate, cover loosely with foil, and let rest for 5 minutes before serving.
