Ingredients

  • 2 large bone-in pork chops
  • 2 tablespoons Dijon mustard
  • 3 cloves garlic minced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

Method

  1. In a medium bowl, whisk together the Dijon mustard, minced garlic, Worcestershire sauce, brown sugar, lemon juice, salt, and pepper until smooth.
  2. Place the pork chops in a large resealable plastic bag or a shallow dish.
  3. Pour the marinade over the chops, seal the bag (or cover the dish), and refrigerate for at least 6 hours, or up to overnight for maximum flavor.
  4. When ready to cook, remove the chops from the fridge and let rest at room temperature for 15 minutes.
  5. Preheat your grill or skillet over medium-high heat. Lightly oil the grates or pan.
  6. Cook the pork chops for 4–5 minutes per side, or until they reach an internal temperature of 145°F (63°C).
  7. Transfer to a plate, cover loosely with foil, and let rest for 5 minutes before serving.
