Ingredients

  • Cooking spray
  • pounds lean ground beef
  • 1 cup plain breadcrumbs or panko
  • ½ cup milk
  • 1 large egg lightly beaten
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • cup brown sugar divided
  • ¼ cup ketchup for glaze

Method

  1. Preheat your oven to 350°F (175°C) and lightly grease a 5×9-inch loaf pan with cooking spray.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, salt, and pepper.
  3. Stir in 2 tablespoons of brown sugar until evenly distributed—this keeps the meat loaf moist.
  4. Press the mixture into the prepared loaf pan, shaping it evenly.
  5. In a small bowl, whisk together ketchup and remaining brown sugar. Spread the glaze over the top of the loaf.
  6. Bake uncovered for 50 minutes, then brush with extra glaze and bake 10–15 minutes more, or until the internal temperature reaches 160°F (71°C).
  7. Remove from oven and let rest 10 minutes before slicing. This helps juices redistribute.
