Buckeyes

Some call buckeyes a cookie, some call them candy, but everyone calls them delicious. These easy chocolate-dipped peanut butter balls are even no-bake!

Ingredients
  

  • 1 ½ cups creamy peanut butter
  • ½ cup unsalted butter softened
  • 1 teaspoon pure vanilla extract
  • 4 cups powdered sugar sifted
  • 1 ½ cups semisweet chocolate chips
  • 1 tablespoon vegetable shortening optional for silky-smooth chocolate
  • Pinch of sea salt optional garnish

Method
 

  1. Line a baking sheet with parchment paper to prevent sticking.
  2. In a large bowl, cream together peanut butter, softened butter, and vanilla extract until smooth.
  3. Gradually add sifted powdered sugar, mixing until a firm dough forms.
  4. Use a teaspoon or cookie scoop to portion dough; roll into 1-inch balls and arrange on the prepared sheet.
  5. In a microwave-safe bowl (or double boiler), melt chocolate chips with shortening in 30-second intervals, stirring until glossy.
  6. Holding each peanut butter ball by a toothpick, dip into melted chocolate, leaving a small circle of peanut butter visible on top.
  7. Place dipped balls back on parchment and sprinkle lightly with sea salt, if desired.
  8. Chill in the refrigerator for at least 30 minutes, or until chocolate has set.
  9. Remove toothpicks, enjoy, and store extras in an airtight container for up to one week.
