Method
- Line a baking sheet with parchment paper to prevent sticking.
- In a large bowl, cream together peanut butter, softened butter, and vanilla extract until smooth.
- Gradually add sifted powdered sugar, mixing until a firm dough forms.
- Use a teaspoon or cookie scoop to portion dough; roll into 1-inch balls and arrange on the prepared sheet.
- In a microwave-safe bowl (or double boiler), melt chocolate chips with shortening in 30-second intervals, stirring until glossy.
- Holding each peanut butter ball by a toothpick, dip into melted chocolate, leaving a small circle of peanut butter visible on top.
- Place dipped balls back on parchment and sprinkle lightly with sea salt, if desired.
- Chill in the refrigerator for at least 30 minutes, or until chocolate has set.
- Remove toothpicks, enjoy, and store extras in an airtight container for up to one week.
