Method
- In a large bowl, beat the butter and sugar together with an electric mixer until light and fluffy.
- Add the egg and vanilla extract; beat until well combined.
- In a separate bowl, whisk together the flour and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
- Cover the dough in plastic wrap and chill for at least 1 hour in the refrigerator.
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- Shape the dough into drop cookies or press through a cookie press. Place 2 inches apart on baking sheets.
- Bake for 10 to 12 minutes, or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
