Butter Cookies

This simple butter cookie recipe can be made as a drop cookie, used in a cookie press, or shaped into a roll and sliced. Perfect for baking with kids!

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • ¼ teaspoon salt

Method
 

  1. In a large bowl, beat the butter and sugar together with an electric mixer until light and fluffy.
  2. Add the egg and vanilla extract; beat until well combined.
  3. In a separate bowl, whisk together the flour and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
  5. Cover the dough in plastic wrap and chill for at least 1 hour in the refrigerator.
  6. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Shape the dough into drop cookies or press through a cookie press. Place 2 inches apart on baking sheets.
  8. Bake for 10 to 12 minutes, or until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
