Method
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream the softened butter and sugar with an electric mixer until light and fluffy, about 3 minutes.
- Add the egg and vanilla extract; beat until fully incorporated.
- Gradually mix in the dry ingredients until a soft dough forms.
- Fit your cookie press with the desired disc and fill it with dough. Press shapes onto the prepared baking sheets, spacing 1 inch apart.
- Sprinkle colored sanding sugar over the top of each cookie, if desired.
- Bake for 8–10 minutes, or until the edges just begin to turn golden.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
