Ingredients
  

  • 2 29 ounce cans yams or sweet potatoes, drained
  • ½ cup 1 stick unsalted butter, melted
  • 1 cup light brown sugar packed
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 cups mini marshmallows

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
  2. Arrange the drained yams evenly in the dish.
  3. In a bowl, whisk together melted butter, brown sugar, vanilla extract, and a pinch of salt until smooth.
  4. Pour the sweet butter mixture over the yams, ensuring each piece is coated.
  5. Bake for 15 minutes, until the sugar mixture is bubbly and the yams are heated through.
  6. Remove from oven, sprinkle mini marshmallows on top, and return to oven for an additional 5–10 minutes, or until marshmallows are golden brown.
  7. Let rest for 2 minutes before serving to allow the glaze to set.
