Candied Yams and Marshmallows

This candied yams and marshmallows recipe is baked in a sweet brown sugar-orange juice syrup, topped with marshmallows, and baked again until golden.

Ingredients
  

  • 2.5 pounds yams about 3 large sweet potatoes, peeled and sliced
  • 1/2 cup brown sugar
  • 1/4 cup honey or maple syrup
  • 1/3 cup fresh orange juice
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 2 cups miniature marshmallows or large marshmallows halved

Method
 

  1. Preheat your oven to 400°F (200°C) and grease a 9x13″ baking dish.
  2. In a large bowl, whisk together brown sugar, orange juice, melted butter, honey, cinnamon, nutmeg, and salt until smooth.
  3. Add the sliced yams to the syrup and toss to coat evenly.
  4. Transfer yams and syrup into the prepared baking dish, spreading into an even layer.
  5. Bake uncovered for 40 minutes, or until yams are tender and syrup is bubbly.
  6. Remove the dish from the oven. Sprinkle marshmallows over the hot yams in an even layer.
  7. Return to the oven and bake an additional 5–7 minutes, or until marshmallows are puffed and golden brown.
  8. Let rest for 5 minutes before serving to allow the syrup to thicken.
