Ingredients
  

  • 4 ounces cream cheese very soft
  • ½ cup sour cream
  • 2 teaspoons chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon sweet or smoked paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon dried oregano
  • 1 16-ounce can refried beans
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons green onions finely chopped (white and green parts)

Method
 

  1. Preheat your oven to 350°F. In a mixing bowl, combine the softened cream cheese and sour cream using an electric hand mixer for a luxuriously smooth blend.
  2. Incorporate the chili powder, ground cumin, salt, paprika, garlic powder, onion powder, and dried oregano. Mix until the spices are well integrated.
  3. Fold in the refried beans. If the beans seem thick, give them a gentle mash before adding (this helps them blend in even better).
  4. Stir in half of both the cheddar and Monterey Jack cheeses along with the chopped green onions.
  5. Spread your dip evenly into an 8×8-inch baking dish (feel free to use an oven-safe dish in any shape—oval, round or rectangular work just as well).
  6. Top with the remaining cheeses and bake for 20 to 25 minutes, or until the cheese is golden, bubbly, and irresistibly melty.
