Cheesy Ground Beef and Potatoes

Ingredients
  

  • Nonstick cooking spray
  • pounds potatoes peeled and thinly sliced
  • 1 pound ground beef
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1 cup sour cream
  • ½ cup milk
  • 2 cups shredded cheddar cheese divided
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Spray a 9×13-inch casserole dish with nonstick cooking spray.
  2. In a large skillet over medium heat, brown the ground beef until no pink remains. Drain excess fat.
  3. Add diced onion and garlic to the beef; cook until the onion is translucent, about 3–4 minutes. Season with salt, pepper, and parsley.
  4. In a small bowl, whisk together sour cream and milk until smooth.
  5. Layer half of the potato slices in the bottom of the prepared dish. Top with the beef mixture and 1 cup of cheddar cheese.
  6. Repeat layers with remaining potatoes and cheese, then pour the sour cream mixture evenly over the top.
  7. Bake for 35–40 minutes, or until potatoes are tender and cheese is bubbly and golden.
  8. Let stand for 5 minutes before serving. Garnish with fresh parsley if desired.
