Chop suey is quick and easy to make with tender diced pork quickly sautéed with crisp mixed vegetables and bean sprouts in a thick brown sauce.

Ingredients
  

  • 1/4 cup vegetable oil or shortening
  • 1 pound pork tenderloin diced into bite-size pieces
  • 2 cups celery sliced on the diagonal
  • 1 cup carrots thinly sliced
  • 1 medium onion thinly sliced
  • 1 cup bean sprouts rinsed and drained
  • 1 clove garlic minced
  • 1 teaspoon fresh ginger grated
  • 3 tablespoons soy sauce
  • 1/2 cup chicken broth
  • 2 teaspoons cornstarch
  • 1 teaspoon sugar
  • Salt and pepper to taste

Method
 

  1. Heat the oil in a large skillet or wok over medium-high heat.
  2. Add diced pork and stir-fry until lightly browned, about 3–4 minutes.
  3. Stir in garlic and ginger; cook for 30 seconds until fragrant.
  4. Add celery, carrots, and onion; continue stir-frying until vegetables are crisp-tender, about 5–6 minutes.
  5. In a small bowl, whisk together soy sauce, chicken broth, cornstarch, and sugar.
  6. Pour the sauce mixture over the pork and vegetables; stir until sauce thickens and glazes the ingredients.
  7. Fold in bean sprouts and heat through for another minute. Season with salt and pepper to taste.
  8. Serve hot over steamed rice or noodles.
