Method
- Heat the oil in a large skillet or wok over medium-high heat.
- Add diced pork and stir-fry until lightly browned, about 3–4 minutes.
- Stir in garlic and ginger; cook for 30 seconds until fragrant.
- Add celery, carrots, and onion; continue stir-frying until vegetables are crisp-tender, about 5–6 minutes.
- In a small bowl, whisk together soy sauce, chicken broth, cornstarch, and sugar.
- Pour the sauce mixture over the pork and vegetables; stir until sauce thickens and glazes the ingredients.
- Fold in bean sprouts and heat through for another minute. Season with salt and pepper to taste.
- Serve hot over steamed rice or noodles.
