Method
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs, then add milk, oil (or melted butter), and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined. The batter should be lumpy, not smooth.
- Let the batter rest for 5 minutes while you heat a griddle or large non-stick pan over medium heat.
- Add a small pat of butter to the heated surface and spread evenly.
- For each flapjack, pour about 1/4 cup of batter onto the hot surface.
- Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip once and cook the other side until golden brown, about 1-2 minutes more.
- Transfer to a warm plate and repeat with remaining batter.
