  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 3/4 cups milk
  • 2 large eggs
  • 1/4 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract
  • Butter for cooking

Method
 

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat the eggs, then add milk, oil (or melted butter), and vanilla extract. Mix well.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined. The batter should be lumpy, not smooth.
  4. Let the batter rest for 5 minutes while you heat a griddle or large non-stick pan over medium heat.
  5. Add a small pat of butter to the heated surface and spread evenly.
  6. For each flapjack, pour about 1/4 cup of batter onto the hot surface.
  7. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  8. Flip once and cook the other side until golden brown, about 1-2 minutes more.
  9. Transfer to a warm plate and repeat with remaining batter.
