Ingredients
  

  • 6 slices day-old bread torn into small pieces
  • 3 large eggs
  • 2 cups milk
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup raisins optional
  • Pinch of salt

Method
 

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or similar casserole pan.
  2. In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, nutmeg, and salt until smooth.
  3. Gently fold in the torn bread pieces, ensuring each chunk is coated in custard. Let it sit for 10 minutes so the bread absorbs the liquid.
  4. If using, stir in the raisins for bursts of sweetness throughout your pudding.
  5. Transfer the mixture to your prepared baking dish and smooth the top with a spatula.
  6. Bake for 45–50 minutes, or until the top is lightly golden and the custard is just set in the center.
  7. Remove from the oven and let cool for 10 minutes before serving.
