- Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or similar casserole pan.
- In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, nutmeg, and salt until smooth.
- Gently fold in the torn bread pieces, ensuring each chunk is coated in custard. Let it sit for 10 minutes so the bread absorbs the liquid.
- If using, stir in the raisins for bursts of sweetness throughout your pudding.
- Transfer the mixture to your prepared baking dish and smooth the top with a spatula.
- Bake for 45–50 minutes, or until the top is lightly golden and the custard is just set in the center.
- Remove from the oven and let cool for 10 minutes before serving.
