- Preheat the oven to 350°F (175°C). Lightly grease a 2-quart baking dish.
- Bring a large pot of lightly salted water to a boil. Add macaroni and cook according to package directions until al dente, about 8 minutes. Drain well.
- Meanwhile, in a medium saucepan over medium heat, melt ¼ cup butter. Whisk in flour, salt, and pepper until smooth and bubbling, about 2 minutes.
- Gradually whisk in milk. Continue cooking and stirring until the mixture thickens and bubbles, about 5 minutes.
- Remove from heat and stir in 1½ cups of cheddar cheese until melted and smooth.
- Add cooked macaroni to the cheese sauce and stir until well coated. Pour into the prepared baking dish.
- Sprinkle the remaining ½ cup cheese on top. For a crispy topping, mix breadcrumbs with 2 tablespoons melted butter and sprinkle over the cheese.
- Bake uncovered in the preheated oven until bubbly and lightly browned on top, about 25-30 minutes.
- Allow to rest for 5 minutes before serving.
