Classic Festive Cranberry Jello Salad

This cranberry jello salad is the perfect blend of sweet and tangy flavors that will brighten up your holiday table. A beautiful ruby-red gelatin dish filled with cranberry sauce, crushed pineapple, and topped with crunchy pecans.

Ingredients
  

  • 2 3 ounce packages cherry-flavored gelatin
  • 2 cups boiling water
  • 1 16 ounce can whole cranberry sauce
  • 1 8 ounce can crushed pineapple, drained
  • 1/2 cup chopped pecans
  • 1 apple finely diced (optional, for extra crunch)
  • 1/4 cup orange juice optional, for added citrus flavor

Method
 

  1. In a large bowl, dissolve the cherry-flavored gelatin in 2 cups of boiling water, stirring for about 2 minutes until completely dissolved.
  2. Allow the gelatin mixture to cool slightly (about 10 minutes) but not set.
  3. Using a fork or whisk, break up the cranberry sauce into smaller chunks and stir into the gelatin mixture until well combined.
  4. Fold in the drained crushed pineapple. If using, add the diced apple and orange juice at this point.
  5. Pour the mixture into a decorative mold or a 9x13 inch dish.
  6. Refrigerate for at least 3 hours or until completely set.
  7. Just before serving, sprinkle the chopped pecans over the top.
  8. If using a mold, briefly dip the bottom in warm water to loosen before inverting onto a serving plate.
