- Peel, core, and chop the apples into roughly 1-inch cubes. Try to keep the pieces similar in size for even cooking.
- Place the chopped apples in a medium saucepan and add water, sugar, cinnamon, and salt.
- Bring the mixture to a boil over medium-high heat, then reduce to a simmer.
- Cover and cook for 15-20 minutes, stirring occasionally, until the apples are very soft and easily mashed with a spoon.
- Remove from heat and stir in the lemon juice.
- For chunky applesauce, use a potato masher to break down the apples to your desired consistency.
- For smooth applesauce, let the mixture cool slightly, then transfer to a blender or food processor and pulse until smooth.
- Taste and adjust sweetness or spices as needed.
- Allow to cool completely before transferring to an airtight container.
