Method
- Start by gathering all your ingredients and setting up your frying station. Heat oil in a deep fryer or large, deep pot to 375°F (190°C).
- Insert wooden skewers or popsicle sticks into frankfurters, leaving enough handle to hold. Pat the frankfurters dry with paper towels (this helps the batter stick better).
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, salt, and pepper.
- In a separate bowl, combine beaten egg, milk, and honey.
- Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be slightly thicker than pancake batter but still pourable.
- Transfer the batter to a tall drinking glass (this makes dipping easier).
- Dip each skewered frankfurter into the batter, turning to coat completely. Allow excess to drip off for a few seconds.
- Carefully lower coated frankfurters into the hot oil, cooking 2-3 at a time to avoid overcrowding.
- Fry for about 3-4 minutes until the coating is golden brown, turning occasionally for even cooking.
- Remove with tongs and drain on paper towels.
- Allow to cool slightly before serving.
