- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the peanut butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
- Beat in eggs one at a time, then stir in vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the peanut butter mixture, mixing on low speed until just combined. Be careful not to overmix.
- Using a cookie scoop or tablespoon, form dough into 1½-inch balls and place 2 inches apart on the prepared baking sheets.
- Using a fork, create the classic crisscross pattern by pressing down lightly on each cookie in two directions.
- Bake for 8-10 minutes until edges are lightly golden but centers still appear soft.
- Remove from oven and let cookies cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
