Ingredients
  

  • 2 cups peanut butter creamy preferred, but crunchy works too
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • cups all-purpose flour
  • teaspoons baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Method
 

  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the peanut butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
  3. Beat in eggs one at a time, then stir in vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the peanut butter mixture, mixing on low speed until just combined. Be careful not to overmix.
  6. Using a cookie scoop or tablespoon, form dough into 1½-inch balls and place 2 inches apart on the prepared baking sheets.
  7. Using a fork, create the classic crisscross pattern by pressing down lightly on each cookie in two directions.
  8. Bake for 8-10 minutes until edges are lightly golden but centers still appear soft.
  9. Remove from oven and let cookies cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
