Method
- Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or lightly grease them.
- In a large mixing bowl, cream together the softened butter and 1½ cups sugar until light and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, then add the vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
- In a small bowl, mix together the ¼ cup sugar and 2 tablespoons cinnamon for the coating.
- Scoop out dough using a cookie scoop or tablespoon (about 1½ tablespoons per cookie). Roll each portion into a ball between your palms.
- Roll each dough ball in the cinnamon-sugar mixture until completely coated.
- Place the coated dough balls on the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 8-10 minutes, or until the edges are set but the centers still appear slightly soft. Don't overbake if you want chewy cookies!
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
