Method
- Melt butter in a medium saucepan over medium-low heat until bubbling but not browning.
- Add flour all at once and whisk continuously for 1-2 minutes to form a smooth paste (roux), being careful not to let it brown.
- Gradually pour in warm milk while whisking constantly to prevent lumps from forming.
- Continue whisking as the sauce simmers for 5-7 minutes until it reaches your desired thickness.
- Season with salt, white pepper, and nutmeg if using.
- Remove from heat and use immediately, or press a piece of plastic wrap directly onto the surface to prevent a skin from forming if using later.
