Method
- Heat the extra-virgin olive oil in a large saucepan over medium heat until shimmering but not smoking.
- Add the sliced garlic and diced onion. Sauté gently until softened and fragrant, about 3-4 minutes, being careful not to brown the garlic.
- Pour in the hand-crushed tomatoes along with their juice. Stir to combine with the garlic and oil.
- Add salt, pepper, and a few whole basil leaves (reserve some for garnish). Stir well.
- Bring to a gentle simmer, then reduce heat to low. Cover partially with a lid and simmer for 25-30 minutes, stirring occasionally.
- Taste and adjust seasoning as needed. If the sauce tastes too acidic, add a small pinch of sugar.
- Remove from heat and discard the cooked basil leaves. Tear fresh basil and stir into the finished sauce.
- Serve immediately over your favorite pasta, or cool and store for later use.
