- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl or stand mixer, cream the softened butter and ½ cup powdered sugar until light and fluffy, about 2-3 minutes.
- Add the vanilla extract and mix until well incorporated.
- In a separate bowl, whisk together the flour and salt.
- Gradually add the flour mixture to the butter mixture, mixing on low speed until just combined. Be careful not to overmix.
- Fold in the chopped nuts until evenly distributed throughout the dough.
- Using a tablespoon or small cookie scoop, portion the dough and roll into 1-inch balls with your hands.
- Place the cookie balls about 1 inch apart on the prepared baking sheets.
- Bake for 12-15 minutes until the cookies are set but not browned. The bottoms may be just slightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes.
- While still warm (but not hot), gently roll each cookie in powdered sugar, coating completely.
- Transfer to a cooling rack to cool completely.
- Once fully cooled, roll the cookies in powdered sugar a second time for that perfect snowy appearance.
