This classic New England lobster roll features chunks of sweet lobster meat, celery, and green onions mixed with a light and tangy mayo served in buttered toasted rolls.

Ingredients
  

  • 1 pound cooked lobster meat roughly chopped into large chunks
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1/4 cup celery finely diced
  • 2 tablespoons green onions thinly sliced
  • 1/2 teaspoon hot sauce optional
  • Salt and freshly ground black pepper to taste
  • 4 New England-style split-top hot dog buns
  • 2 tablespoons butter softened
  • Fresh chives or dill for garnish optional

Method
 

  1. In a large bowl, gently combine the lobster meat, mayonnaise, lemon juice, celery, and green onions. Be careful not to break up the lobster chunks too much.
  2. Add hot sauce (if using), and season with salt and pepper to taste. Toss gently to combine.
  3. Cover the lobster mixture and refrigerate for at least 10 minutes to allow the flavors to blend.
  4. While the lobster mixture chills, prepare the rolls. Spread the outside of each split-top bun with softened butter.
  5. Heat a large skillet over medium heat. Place the buns on their sides in the skillet and toast until golden brown on both outer surfaces, about 1-2 minutes per side.
  6. Divide the chilled lobster mixture evenly among the toasted buns.
  7. Garnish with fresh chives or dill if desired, and serve immediately.
