Method
- In a large bowl, gently combine the lobster meat, mayonnaise, lemon juice, celery, and green onions. Be careful not to break up the lobster chunks too much.
- Add hot sauce (if using), and season with salt and pepper to taste. Toss gently to combine.
- Cover the lobster mixture and refrigerate for at least 10 minutes to allow the flavors to blend.
- While the lobster mixture chills, prepare the rolls. Spread the outside of each split-top bun with softened butter.
- Heat a large skillet over medium heat. Place the buns on their sides in the skillet and toast until golden brown on both outer surfaces, about 1-2 minutes per side.
- Divide the chilled lobster mixture evenly among the toasted buns.
- Garnish with fresh chives or dill if desired, and serve immediately.
