Ingredients

  • 1 medium head green cabbage chopped into 1-inch pieces
  • 6 slices bacon diced
  • 1 large onion diced
  • cup vegetable oil
  • 2 cloves garlic minced
  • 1 teaspoon salt or to taste
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes optional, for heat
  • 1 tablespoon apple cider vinegar optional, for tanginess

Method

  1. Prepare your ingredients by chopping the cabbage into 1-inch pieces, dicing the bacon and onion, and mincing the garlic.
  2. In a large skillet or Dutch oven, cook the diced bacon over medium heat until crispy, about 5-7 minutes.
  3. Add the diced onion to the bacon and sauté until translucent, approximately 3-4 minutes.
  4. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  5. Add the vegetable oil to the pan if needed (you may need less if your bacon rendered sufficient fat).
  6. Add the chopped cabbage to the skillet and toss to coat with the bacon fat and oil.
  7. Season with salt, black pepper, and red pepper flakes if desired.
  8. Cover the skillet and reduce heat to medium-low. Cook for 10 minutes, stirring occasionally.
  9. Remove the lid and continue cooking for an additional 5 minutes until the cabbage reaches your desired tenderness.
  10. If using, stir in the apple cider vinegar just before serving for a tangy kick.
  11. Taste and adjust seasoning if necessary before serving hot.
