Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream together the softened butter and sugar in a mixing bowl until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Scoop and roll dough into balls, coat in sugar if desired, and place on prepared baking sheets about 2 inches apart.
- Bake for 8–10 minutes, until the edges are lightly golden. Let cool on the sheet before transferring to a wire rack.
