Ingredients
  

  • 2 ripe bananas mashed
  • 2 cups rolled oats
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon optional
  • pinch of salt

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mash the bananas until smooth and creamy. Stir in honey and vanilla extract.
  3. Add rolled oats, cinnamon, and a pinch of salt. Mix until all ingredients are well combined.
  4. Use a spoon to drop rounded tablespoonfuls onto the prepared sheet. Gently flatten each mound with the back of a spoon.
  5. Bake for 12–15 minutes or until edges turn golden. Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack.
