- In a large pot, combine the grapes and water. Bring to a boil, then reduce heat and simmer until grapes burst, about 15 minutes.
- Use a wooden spoon to gently mash grapes, then pour the mixture through a cheesecloth-lined strainer. Let juice drip for 30 minutes. Discard solids.
- Measure 6 cups of grape juice. Return juice to the pot and stir in powdered pectin. Bring to a rolling boil.
- Quickly stir in sugar, returning mixture to a full boil. Boil hard for 1 minute, stirring constantly.
- Remove from heat and skim off any foam. Stir in lemon juice and butter if using.
- Ladle jelly into sterilized jars, leaving 1/4-inch headspace. Seal and process jars in a boiling-water bath for 5 minutes.
