Fried corn fritters make a perfect starter, side dish, or snack. These crispy treats feature a simple drop batter studded with tender corn kernels.

Ingredients
  

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 large eggs lightly beaten
  • ½ cup milk
  • 2 cups fresh or frozen corn kernels
  • 3 cups oil for frying

Method
 

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Stir in the eggs and milk until just combined, forming a smooth drop batter.
  3. Fold in the corn kernels, mixing gently to distribute evenly.
  4. Heat 3 cups of oil in a heavy pot or deep fryer to 365°F (185°C).
  5. Using two spoons, drop heaping tablespoons of batter into the hot oil.
  6. Fry for 2–3 minutes per side, or until golden brown and crispy.
  7. Transfer to a paper towel–lined plate to drain excess oil.
  8. Season with a pinch of salt and serve warm.
