- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Stir in the eggs and milk until just combined, forming a smooth drop batter.
- Fold in the corn kernels, mixing gently to distribute evenly.
- Heat 3 cups of oil in a heavy pot or deep fryer to 365°F (185°C).
- Using two spoons, drop heaping tablespoons of batter into the hot oil.
- Fry for 2–3 minutes per side, or until golden brown and crispy.
- Transfer to a paper towel–lined plate to drain excess oil.
- Season with a pinch of salt and serve warm.
